Red Velvet cupcakes

  Information to know before baking:

* Preheat oven to 375 degrees Fahrenheit

* Bakes for 18 to 23 minutes

*Makes 24 cupcakes

Ingredients:

* 1 2/3 cups all-purpose flour

* 1 cup granulated sugar

* 1/2 cup packed brown sugar

* 1/2 cup shortening

*1 1/2 cups buttermilk

* 1 1/2 cups teaspoons baking soda

* 1 teaspoon salt

* 1 teaspoon vanilla

* 2 egg

* 1 container (1 lb) cream cheese frosting

. Directions:

1.Heat oven to 350ºF.

2. Grease and flour two 8- or 9-inch round cake pans, or 13x9-inch pan.

4. In large bowl, beat all cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally.

5. Add in red food color and mix well.

.6. Pour into pans.

 

. .7. Bake 18 to 23  minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.

8. Top with the cream cheese.
